Why We Use a Chocolate Melting Machine (And Why It’s NOT a Tempering Machine)

One of the most misunderstood machines in chocolate making is the chocolate melting machine.

A lot of people confuse it with a chocolate tempering machine — but they are completely different.

This machine is simply used for melting chocolate in a controlled and clean way.

How It Works

At the bottom of the machine, there is a heating coil and a water compartment.

Once water is added and the temperature is set, the heating coil heats the water and creates steam. On top of this compartment sit stainless steel containers where the chocolate is placed.

The steam gently melts the chocolate evenly without direct heating.

This allows us to precisely control temperatures anywhere from around 30°C to 80°C.

Why We Prefer This Over the Double Boiler Method

Before using this machine, melting chocolate using a double boiler was always a messy and stressful process.

The biggest risk?

Even a single drop of water entering the chocolate can make it seize completely and ruin the entire batch.

This machine makes the process:

  • Cleaner

  • More temperature-controlled

  • Safer for chocolate handling

  • Much more consistent during production

For small food brands working with chocolate regularly, a melting machine becomes incredibly useful very quickly.

Important Difference

A chocolate melting machine only melts and maintains temperature.

It does not temper chocolate automatically.

Tempering is a separate process that controls the crystal structure of cocoa butter to give chocolate:

  • Shine

  • Snap

  • Better texture

  • Stability at room temperature

Sharing the Vendor

A lot of people ask us where we source our machines from, so we’ll also be sharing the vendor details for this melting machine below for anyone building in the chocolate space. NewBasics (Vardhaman Enterprises) https://share.google/hENJy2AiqTQI0i1V2
